Vegan Superfood

I have loved food and cooking since I was a kid, but my I’ve only been professionally cooking for about 6 years. During and after culinary school I absorbed knowledge like a sponge from my chefs because this is something I truly care about. Since culinary school, in my own personal journey with health and fitness I found that vegan cooking opens up flavor potentials that are not limited to what animal protein you are pairing them with. Basing a dish around vegetables allows for not only a healthier meal, but a more enjoyable and satiating experience.

Describe your cooking experience: My culinary journey started with humble beginnings at Chipotle and Noodles and Co. and I used that time to master the basics of knife skills, seasoning, and organization. I now work at a James Beard award winning fine dining restaurant in Downtown Denver.
